The Horseshoe Café hosted a business luncheon recently. As we are closed on Sunday and Monday, we can make use of the building for private parties/meetings/functions. We catered a plated luncheon meeting:
First course: A lettuce salad with Mango Vinaigrette dressing, served with a fresh out the oven cheddar and fresh sage biscuit and a whipped zinfandel butter.
Second course: Chicken Roulade (chicken breast stuffed with Prosciutto ham, pesto and parmesan cheese - rolled and then prepared in the induction burner (cooking method known as "Sous Vide") on a swirl of orange chutney; wild rice and quinoa with onion peppers and tomatoes, seasoned with fresh herbs, next to zinfandel brined roasted asparagus crusted in toasted almonds.
Dessert course: Amaretto stewed peach cobbler with home-made granola crunch, topped with whipped cream and toasted almonds.
